These past few days have been extremely hot and humid!!! And for those of us not lucky enough to own a pool or have time to go down to the beach, the next best thing is to eat a nice, fresh salad. There are countless ways to enjoy a salad, depending on what kind of lettuce we prefer, toppings we like, and favorite salad dressing/s. If you happen to run out of salad dressing or simply want to mix it up a bit, here’s a simple salad dressing you may want to test out :). (P.S. way less calories and more health benefits than creamy counterparts 😉 )
1 whole orange
1 whole lemon
2 tablespoons of olive oil
pinch of salt
pinch of black pepper
Directions: Simply squeeze the entire orange and lemon into a bowl, making sure not to leave seeds inside. Add olive oil and mix them together so that they become somewhat homogeneous and add a pinch of salt and black pepper. Mix all together again. Add more salt or black pepper if desired.
My mom randomly made this salad dressing one day and I loved it! It’s really light, yet very flavorful! You might have some leftovers, depending on how heavy or light you dress your salad. Pour leftover into any glass or plastic container and store it in the refrigerator. It always lasts me a week and may last more, although I have never had it past that time.
